Description
A rich, creamy chicken casserole with a buttery Ritz cracker topping.
Ingredients
- 1/4 cup melted butter
- 4 cups cooked chicken, shredded or chopped (rotisserie works great)
- 1 package (8 oz) cream cheese, softened
- 1 cup sour cream
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup shredded cheddar cheese (plus more for topping)
- 1/4 cup green onions, chopped (optional, for added flavor)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 sleeve Ritz crackers, crushed
- 1/4 cup melted butter

Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

In a large mixing bowl, combine cream cheese, sour cream, and cream of chicken soup until smooth.

Stir in the shredded chicken, cheddar cheese, green onions (if using), garlic powder, onion powder, and a pinch of salt and pepper.

Spread the mixture evenly into the prepared baking dish.

In a small bowl, mix the crushed Ritz crackers with melted butter until well coated.

Sprinkle the buttery crackers evenly over the casserole.

Bake uncovered for 30–35 minutes, or until hot and bubbly and the top is golden brown.

Let cool for 5–10 minutes before serving. (Garnish with more green onions or parsley if desired.)
